SQUASH
CRISP

4 Granny Smith or tart apples, thinly sliced (use a mandoline slicer for uniformity)

1 pound butternut squash, peeled, seeded, and thinly sliced

3 tbsp freshly squeezed lemon juice

1 cup raw oats

1/2 cup oat flour (mill oats in a food processor to become flour)

Dry spice mix:

2 tbsp allspice
-
1 tbsp onion powder
-
1/2 tbsp turmeric
-
1/2 tbsp thyme
-

1/4 cup maple syrup

1/2 banana

In a large bowl, combine butternut squash and apple slices, dry spice mix and only 2 tbsp of lemon juice. Rub spice mix gently over all slices

Layer slices into a glass 9-in. square baking dish

Cover and bake at 350° for 30 minutes

In a small bowl, combine flour, oats, maple syrup, banana and the remaining tbsp of lemon juice until the mix resembles coarse crumbles
-
Remove the apples and squash from the oven, sprinkle crumble mixture over the bake generously
-
Bake 45 to 50 minutes longer until topping is golden brown. Make sure the apple squash crisp is tender and can be pierced with a fork
