Salad Ingredients:

  • 1 cup celery stalks, sliced

  • 1 cup Granny Smith apples, diced

  • 1 cup Braeburn apples, diced

  • 1 cup quinoa, cooked and cooled

  • 3/4 cup dried apricots, diced

  • 1/4 cup onion, finely chopped

  • 1/4 fresh cilantro, minced

Vinaigrette Ingredients:

  • 1/2 cup non-fat yogurt 

  • 2 tbsp wine vinegar

  • 1 tbsp honey

  • 1-2 tsp orange zest

Organic Ingredients:


  1.  In a large bowl, combine all salad ingredients and toss until all ingredients are evenly covered in quinoa

  2. In a small mixing bowl or jar, whisk all vinaigrette ingredients together. In a jar, twist the lid on and shake vigorously

  3. Drizzle vinaigrette dressing over salad and let chill for at least 20 minutes before serving

Appetizing Alternatives:

Apples can be substituted with pears, mangos, or peaches. Dried apricots can be exchanged for cranberries, raisins and figs. Instead of cilantro, parsley can also be used
