+ QUINOA
WALDORF SALAD
Salad Ingredients:

1 cup celery stalks, sliced

1 cup Granny Smith apples, diced

1 cup Braeburn apples, diced

1 cup quinoa, cooked and cooled

3/4 cup dried apricots, diced

1/4 cup onion, finely chopped
-
1/4 fresh cilantro, minced
Vinaigrette Ingredients:

1/2 cup non-fat yogurt
-
2 tbsp wine vinegar
-
1 tbsp honey
-
1-2 tsp orange zest

In a large bowl, combine all salad ingredients and toss until all ingredients are evenly covered in quinoa

In a small mixing bowl or jar, whisk all vinaigrette ingredients together. In a jar, twist the lid on and shake vigorously

Drizzle vinaigrette dressing over salad and let chill for at least 20 minutes before serving
Appetizing Alternatives:
Apples can be substituted with pears, mangos, or peaches. Dried apricots can be exchanged for cranberries, raisins and figs. Instead of cilantro, parsley can also be used
