MOROCCAN
INSPIRED
CARROT SALAD
Salad Ingredients:

3-4 large carrots

1/2 small red onion
-
1/2 bell pepper (red or green)

2 handfuls fresh parsley

Vinaigrette Ingredients:

Juice from one lemon or lime
-
Juice from one half of an orange
-
2 tbsp cold pressed flaxseed oil
-
1 tbsp wine vinegar
-
1-2 tsp molasses or maple syrup, to taste

1 tsp coriander powder

Toppings:
-
2-3 spring onions or scallions, finely sliced
-
1/3 cup dates or raisins (golden or black)

In a food processor, combine salad ingredients and quickly shred until well-mixed

In a large bowl, whisk vinaigrette ingredients together. Make sure to blend well - until powder, oil and syrups are emulsified

Add salad ingredients to the vinaigrette and toss gently with toppings

Place Moroccan Inspired Carrot Salad atop cooked quinoa or riced cauliflower, adding sautéed spinach or kale for extra taste and texture
