Salad Ingredients:

  • 3-4 large carrots

  • 1/2 small red onion

  • 1/2 bell pepper (red or green)

  • 2 handfuls fresh parsley

Vinaigrette Ingredients:

  • Juice from one lemon or lime

  • Juice from one half of an orange

  • 2 tbsp cold pressed flaxseed oil

  • 1 tbsp wine vinegar

  • 1-2 tsp molasses or maple syrup, to taste

  • 1 tsp coriander powder


  • 2-3 spring onions or scallions, finely sliced

  • 1/3 cup dates or raisins (golden or black)

Organic Ingredients:


  1.  In a food processor, combine salad ingredients and quickly shred until well-mixed

  2. In a large bowl, whisk vinaigrette ingredients together. Make sure to blend well - until powder, oil and syrups are emulsified

  3. Add salad ingredients to the vinaigrette and toss gently with toppings

Make It A Meal:

Place Moroccan Inspired Carrot Salad atop cooked quinoa or riced cauliflower, adding sautéed spinach or kale for extra taste and texture
